Healthy(ish) Pumpkin Bread

This healthy pumpkin bread is moist, flavorful, and every bite tastes just like fall. I used maple syrup and coconut oil in lieu of butter and sugar - a bread your are sure to love!

Ingredients

Dairy:

2 eggs

Pantry:

1 1/2 cups white whole wheat flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1 1/2 tsp pumpkin pie spice

1/2 tsp ginger ground

1/3 cup coconut oil (melted)

3/4 cup maple syrup

1 cup pumpkin puree

1 tsp vanilla

1/2 cup chocolate chips (or pecans/walnuts), plus more for garnish (optional)

Instructions

  1. Preheat the oven to 350, line a loaf pan with parchment paper & gather all your ingredients.

Notes

GF peeps: try using gluten free flour, and if the batter seems dry, add 1/4 cup milk of choice.

Plant based peeps: sub regular eggs for flax egg. For 1 egg: mix 1 Tbsp ground flaxseed with 2.5 Tbsp water and let it sit for a few minutes until it thickens
