    Vegan Sausage & Potato Foil Packets

    I make vegan sausage & potato foil packets when camping and I've yet to hear a complaint! They are quick, easy, filling, healthy, and minimal prep/waste. Plus, when you've been camping for days, a hot meal without a bunch of dishes JUST hits different.

    What are Foil Packets?

    Foil packets are basically ingredients wrapped up inside foil to create little pouches. You toss those pouches into a fire (that has some active coal action happening) and let 'em cook, for 10-20 minutes. Other than precooking potatoes and slicing up some sausage/veg - they are super hands off and oh-so satisfying!

    You can even prep them ahead of time in the comfort of you home kitchen and bring them ready to toss in a fire. You can also cook them on a gas stove. You can fill them with whatever you want, really.

    They are amazing, and when you're done, you toss the foil in the trash and you're clean up is DONE. They're great, shoutout to my friends for introducing them to me.

    Notable Ingredients: Vegan Sausage & Potato Foil Packets

    • veggie sausage: use whatever brand is your fave. I love not worrying about raw meat while camping - so I opt for these. Use whatever you want - just know your cooking time will vary if you use raw meat!
    • potatoes: we love a hefty starch. I pre-cook the potatoes in boiling salt water to reduce the cooking time on the packets. If you use raw potatoes, be sure to cut them very small so they cook at the same pace as your veggie sausage.
    • peppers/onion (veg): I don't worry about onion/pepper lasting a few days unrefrigerated before I make this meal which is why I use them. Use whatever floats your boat.
    • canola oil: I find this oil handles the heat of a fire better than olive oil. You could sub coconut oil (itll taste different) or avocado oil. Just use a high heat oil.
    • HEAVY duty aluminum foil: THIS is important. You will double wrap the packets incase the foil punctures (which, it does people). The heavy duty foil adds that much more protection from fire ashes sneaking inside through a little puncture in the foil.
    • spices: go crazy. I have a pill container I use to store spices when camping. So i'll use garlic & onion powder, smoked paprika, cumin, red pepper flakes and Italian seasoning to zest up meals.

    Vegan Sausage & Potato Foil Packets Cooking Tips

    • double wrap your food in heavy duty foil. Most important step. You don't want all those tasty juices to seep out. You DEF don't want ashes sneaking into a little hole your packet got while being flipped. Double wrap - double protection - problem solved!
    • using fire: make sure you let the fire burn hot, then develop some coals. When building the fire, keep in mind you're going to be cooking with it. Leave some space to toss the packets in.
    • Flip the packets and move them around while cooking - every 5-7 minutes. Some parts of the fire burn hot and some less so, moving things around helps distribute the heat more evenly.
    • If using a stove or oven - same as above. Move things around and flip them to mitigate burns. TURNING OCCASIONALLY will help the cooking process so much.

    Home Cook Hacks:

    • pre-cook your potatoes. Even better - make the packets at home! Then your not trying to assemble them in a wind storm like I recently was!
    • Not going camping? NO worries! You can prep these for meals throughout the week, or make a few, freeze a few, and cook them up individually!

Simply take the ingredients, put them inside a self made foil packet, and cook with whatever means you have! They are healthy, filling, low- waste AND easy to clean up. Plus, you can prep them ahead of time!

    Ingredients

    Scale
    • 1 medium onion (any color)
    • 1 bell pepper
    • 1 package baby potatoes (or 3-4 regular potatoes)
    • 1 cup canola oil
    • 2-3 tsp garlic powder
    • 2-3 tsp smoked paprika
    • 2-3 tsp red pepper flakes
    • 2-3 tsp black pepper
    • 2-3 tbsp kosher salt
    • 2-3 (OR whatever other spices you have, cumin, etc)
    • 1 roll heavy duty aluminum foil

    Instructions

    **You can pre-prep these before camping so all you have to do it throw em on a fire**

    1. Rip 8-10 foil sheets about a foot long (this will make 5 packets). 
    2. Bring a pot of salted water to a boil. Quarter potatoes and add them to the water. Cook 10-15 minutes until potatoes are “al dente”. This speeds up the foil cooking process. 
    3. While potatoes cook, cut onion and bell pepper into strips. Slice veggie sausages into ½ inch slices. 
    4. Once potatoes are cooked, assemble the packets.
    5. Lay 2 sheets of foil on top of each other. Add ¼ cup of potatoes, sausage, pepper, onion to bottom half of the foil. Top with a hefty drizzle of canola oil, salt, pepper, and sprinkle spices (or whatever spices you have on hand). 
    6. Mix everything together - then bring the ends of the foil to meet and crimp the edges together, rolling inward to create a seal - similar to making a calzone. (see video above)
    7. Repeat this step with the second piece of foil - to give double reinforcement before they go into the fire!
    8. Place the packet onto fire coals or a portable stove and cook, turning occasionally, for 10-15 minutes. Pull one out, carefully open it up and make sure potatoes are cooked/sausage is hot. Cook 5 more minutes if needed.
    9. Open up and enjoy straight away!

    Notes

    - you can prep these at home so all you have to do is toss in a fire/on the campstove!

    - use whatever protein/veggies you like/have on hand!

Im coming to the end of a huge growth stage in my life and career as a food blogger. 
When I quit my pursuit of grad school to pursue my dream of starting a food blog - I was so naive as to what that actually meant 😅

I quickly learned just HOW much goes on behind the scenes. Close to 2yrs later I learned to build a website, code, use a dslr camera, stage and edit photos, SEO, Pinterest, tailwind, analytics, video creation/editing and so so SO much more. 

To be honest, it's been really fuhreaking hard work. Most of its been self taught. But I've also I invested a LOT of time, energy, and money into courses & equipment to teach me the basics and spent countless hours googling how to do things.

I've gained SO much respect for all the bloggers and creators of all types out there. There are days I really question why I'm not working in a hospital with a good salary and benefits. And there are days I am so stoked I decided to follow my dreams. It takes a ton of faith in the unknown to believe in yourself, to put your head down and crank when your questioning all your choices, and not give up. 

Im beyond privileged to have the freedom to try and hack this, and I'm so grateful for that opportunity. 

It's almost surreal to be sitting here at the end of this massive to-do list, with a full blown blog, and the knowledge and tools I have now to take it to the next step.

2022 is all about consistency for me and we've now reached the cranking out of content phase. 
Lots of fun new series coming up :) 

I have no idea what direction this blog will go in, its a serious labor of passion and love and I'm feelin good about what's to come.
