When I was a kid, my parents always told me I made the best guacamole. Fast forward to adulthood, I get similar feedback from those around me! So without further ado, here she it.
This is the best guacamole! It goes well on so many things, and it's pretty darn good for you too! When I was younger, there was this mom and pop mexican restaurant we would go to that had the best guacamole. I am sure they still do, but they have since closed down. It was creamy, flavorful, and soooo satisfying!
As a kid I tried really hard to recreate that exact guacamole, and this is the result. Whenever my parents needed guacamole made - I was their gal! The secret is getting the avocado super creamy... I know, I know. My chunky guac lovers are not loving this information right now. SO if you want to keep it chunky, you do you. For the rest of you, creamy = fire guac.
To prepare the best guacamole:
This stuff is best when you use fresh garlic mashed in a mortar & pestle with salt. It's just, amazing! If you don't have those tools on hand, you could repeatedly smash garlic and a bit of salt on a cutting board with a fork into a fine paste. Using salt will give some abrasiveness needed to really mash the garlic. Of course, you can always use garlic powder.
And please, don't use iodized salt, it leaves a metallic aftertaste. Go get some sea or kosher salt - much better for cooking.
Next, mash the avocados, adding a little water to thin out the mixture. Add your smashed garlic, spices, and chopped veggies and voila!
It goes great on most dishes, even those that are not mexican inspired
