Quick & Easy Ramen Stir Fry

This ramen stir fry is a quick and easy meal that uses packaged ramen noodles as the base for the stir fry. Simply add egg, tofu, veggies, and whatever sauces you have on hand to bring packaged ramen to the next level.

Ingredients

Produce:

  • 4 green onions, thinly sliced
  • 1-2 shredded carrots
  • handful spinach, ripped into smaller pieces
  • small handful cilantro, chopped
  • any other veggies you wish!

Pantry:

  • 2 packs of ramen, I use nongshim shin ramen
  • 1/2 - 1 tsp light soy sauce (regular soy is fine too)
  • 1-2 tsp olive or neutral oil
  • 1/4 tsp white pepper (optional)
  • 1 tsp toasted sesame seeds (optional)
  • splash fish sauce (optional)
  • 1/2 - 1 tsp oyster sauce (optional)

Dairy

  • 2-3 eggs, lightly whisked

Instructions

Make this with what you have, if you don't have all the additional sauces - don't fret! It will still be tasty, the sauces just take the dish next level.

  1. Bring a large frying pan filled 2/3 of the way with water to a boil.
  2. Prep your veg: shred 2 carrots, slice 4 green onions thinly, and chop a small handful of cilantro (if ya dig it).
  3. Lightly whisk 2-3 eggs in a separate bowl.
  4. Take your unopened package of ramen and crunch the noodles inside with your hands until they are well broken.
  5. When water is simmering/boiling - add the dry noodles and cook 4 minutes till al dente, then drain them and set aside.
  6. Add 1-2 tsp of you oil of choice to the same large frying pan over medium heat.
  7. Add whisked eggs and cook until lightly scrambled, then add your carrot and most of your cilantro and green onion (saving a little bit for garnish).
  8. Mix together and cook for about 2 minutes.
  9. Add your noodles, 1/4 cup of water,  and all of the seasoning packets they came with to the pan & mix well.
  10. Add 1/2-1 tsp light soy sauce (or regular soy sauce). If you have it, add 1/4 tsp white pepper, 1 tsp toasted sesame seeds, a splash of fish sauce, and 1/2 - 1 tsp oyster sauce and mix well.
  11. Rip up a handful of spinach and add it to pan, mix well to combine.
  12. Continue cooking for 1-2 minutes, occasionally stirring until you have nice fried noodles and all the water has evaporated out.
  13. Serve in bowls topped with sesame seeds, green onion, and cilantro. Tastes best served immediately!

 

Notes

Use tofu for eggs if you wish. Add any and all veggies you have on hand.
