Make this with what you have, if you don't have all the additional sauces - don't fret! It will still be tasty, the sauces just take the dish next level.
- Bring a large frying pan filled 2/3 of the way with water to a boil.
- Prep your veg: shred 2 carrots, slice 4 green onions thinly, and chop a small handful of cilantro (if ya dig it).
- Lightly whisk 2-3 eggs in a separate bowl.
- Take your unopened package of ramen and crunch the noodles inside with your hands until they are well broken.
- When water is simmering/boiling - add the dry noodles and cook 4 minutes till al dente, then drain them and set aside.
- Add 1-2 tsp of you oil of choice to the same large frying pan over medium heat.
- Add whisked eggs and cook until lightly scrambled, then add your carrot and most of your cilantro and green onion (saving a little bit for garnish).
- Mix together and cook for about 2 minutes.
- Add your noodles, 1/4 cup of water, and all of the seasoning packets they came with to the pan & mix well.
- Add 1/2-1 tsp light soy sauce (or regular soy sauce). If you have it, add 1/4 tsp white pepper, 1 tsp toasted sesame seeds, a splash of fish sauce, and 1/2 - 1 tsp oyster sauce and mix well.
- Rip up a handful of spinach and add it to pan, mix well to combine.
- Continue cooking for 1-2 minutes, occasionally stirring until you have nice fried noodles and all the water has evaporated out.
- Serve in bowls topped with sesame seeds, green onion, and cilantro. Tastes best served immediately!
