    Quick & Easy Ramen Stir Fry

    This ramen stir fry is a quick and easy meal that uses packaged ramen noodles as the base for the stir fry. Simply add egg, tofu, veggies, and whatever sauces you have on hand to bring packaged ramen to the next level.

    What is Quick & Easy Ramen Stir Fry?

    Simply put - its fried noodles, veg, eggs, and whatever else your feeling that gets its flavor from the spice packet that comes from ... packaged ramen! Ok so I know this may not be the healthiest recipe ever - but hear me out. Keeping packaged ramen on hand for those nights you REALLY don't feel like cooking (or the nights you feel like asian food) can be a life saver.

    Plus, its super customizable. You can add in eggs, tofu, and any veggies dying in your fridge - and turn them into a super flavorful dish.

    I LOVE drunken noodles (pad kea mao) and there is no where even close to where I live that serves them up well, so I make this dish when I am wanting a salty, savory, noodle dish.

    Plus it takes one pot, and about 15 minutes. Have I sold you on it yet!?

    Notable Ingredients in Easy Ramen Stir Fry

    • ramen: I only buy the Asian and Indian style ramen - because the seasoning packets they use are next level. Forget the chicken and beef flavored ramen you had growing up as a kid - these are the way to go!
    • eggs: I love eggs in asian dishes
    • fresh/frozen veg: adds some texture and flavor differences
    • white pepper: if you've got it, a little goes a long way with flavor in any thai dish. I use it in many different kinds of asian dishes
    • sauces: I have a few asian condiments that I use in most my dishes. I learned about them when I went to Thailand and you can get them at any asian store. If you have them on hand, use them! If not, this dish will still taste good without them
      • Oyster Sauce: an umami bomb - this stuff is SO GOOD. If your vegan, they make mushroom based oyster sauce.
      • Fish Sauce: sounds how it tastes! A little goes a long way, if you hate seafood, leave this out.
      • Light Soy Sauce: this is my primary fave soy sauce. It's saltier than normal soy sauce and I like its flavor more when I am using it to cook. If you don't have this regular soy sauce will work.

    *** a word about asian condiments: most the brands you will find in standard american supermarkets do not taste the same as their asian brand counterparts. I suggest going to an asian market to get condiments, or ordering them online from asian brands.

    Modern Home Cook Substitutions

    DISCLAIMER: the ramen I use is spicy (the shin ramen in the red package below). So, if you are not into spicy ramen, I suggest using one of the brands listed below. All will work super well in this recipe and can be found in the asian foods section at most American grocery stores.

    • my fave ramen to use - its spicy!
    • Good non-spicy option
    • a good Indian style ramen that has many non- spicy options

    Again, use any and all of the suggested sauces I mention, but don't worry about going to buy them. I will say, they are worth a trip to the asian market to purchase as kitchen staples that will bring all your noodles, stir fries, ramen dishes (and more) up several notches!

    Ingredients

    Scale

    Produce:

    • 4 green onions, thinly sliced
    • 1-2 shredded carrots
    • handful spinach, ripped into smaller pieces
    • small handful cilantro, chopped
    • any other veggies you wish!

    Pantry:

    • 2 packs of ramen, I use nongshim shin ramen
    • ½ - 1 tsp light soy sauce (regular soy is fine too)
    • 1-2 tsp olive or neutral oil
    • ¼ tsp white pepper (optional)
    • 1 tsp toasted sesame seeds (optional)
    • splash fish sauce (optional)
    • ½ - 1 tsp oyster sauce (optional)

    Dairy

    • 2-3 eggs, lightly whisked

    Instructions

    Make this with what you have, if you don't have all the additional sauces - don't fret! It will still be tasty, the sauces just take the dish next level.

    1. Bring a large frying pan filled ⅔ of the way with water to a boil.
    2. Prep your veg: shred 2 carrots, slice 4 green onions thinly, and chop a small handful of cilantro (if ya dig it).
    3. Lightly whisk 2-3 eggs in a separate bowl.
    4. Take your unopened package of ramen and crunch the noodles inside with your hands until they are well broken.
    5. When water is simmering/boiling - add the dry noodles and cook 4 minutes till al dente, then drain them and set aside.
    6. Add 1-2 tsp of you oil of choice to the same large frying pan over medium heat.
    7. Add whisked eggs and cook until lightly scrambled, then add your carrot and most of your cilantro and green onion (saving a little bit for garnish).
    8. Mix together and cook for about 2 minutes.
    9. Add your noodles, ¼ cup of water,  and all of the seasoning packets they came with to the pan & mix well.
    10. Add ½-1 tsp light soy sauce (or regular soy sauce). If you have it, add ¼ tsp white pepper, 1 tsp toasted sesame seeds, a splash of fish sauce, and ½ - 1 tsp oyster sauce and mix well.
    11. Rip up a handful of spinach and add it to pan, mix well to combine.
    12. Continue cooking for 1-2 minutes, occasionally stirring until you have nice fried noodles and all the water has evaporated out.
    13. Serve in bowls topped with sesame seeds, green onion, and cilantro. Tastes best served immediately!

     

    Notes

    Use tofu for eggs if you wish. Add any and all veggies you have on hand.

Im coming to the end of a huge growth stage in my life and career as a food blogger. 
When I quit my pursuit of grad school to pursue my dream of starting a food blog - I was so naive as to what that actually meant 😅

I quickly learned just HOW much goes on behind the scenes. Close to 2yrs later I learned to build a website, code, use a dslr camera, stage and edit photos, SEO, Pinterest, tailwind, analytics, video creation/editing and so so SO much more. 

To be honest, it's been really fuhreaking hard work. Most of its been self taught. But I've also I invested a LOT of time, energy, and money into courses & equipment to teach me the basics and spent countless hours googling how to do things.

I've gained SO much respect for all the bloggers and creators of all types out there. There are days I really question why I'm not working in a hospital with a good salary and benefits. And there are days I am so stoked I decided to follow my dreams. It takes a ton of faith in the unknown to believe in yourself, to put your head down and crank when your questioning all your choices, and not give up. 

Im beyond privileged to have the freedom to try and hack this, and I'm so grateful for that opportunity. 

It's almost surreal to be sitting here at the end of this massive to-do list, with a full blown blog, and the knowledge and tools I have now to take it to the next step.

2022 is all about consistency for me and we've now reached the cranking out of content phase. 
Lots of fun new series coming up :) 

I have no idea what direction this blog will go in, its a serious labor of passion and love and I'm feelin good about what's to come.

    Quick & Easy Ramen Noodle Stir Fry! @nongshimusa r Quick & Easy Ramen Noodle Stir Fry! @nongshimusa ramen is the star of this show. This dish is perfect for those nights you want take out/something quick and easy to make that is still flavorful.

Super simple to make and you can use up all sorts of dying veggies in the fridge. 

Plus, if you have a few Asian condiments lying around you can take this from a 7 to a 10 real quick. If not- no worries... It's still fire!
