    Massaged Avocado Kale Salad

    Massaged avocado kale salad is a go-to recipe of mine. I make it as a quick side salad all the time. Kale, avocado, nooch, & spices all massaged together with some fresh kale! Topped with herbs, nuts, & seeds - but add whatever protein/carbs/and veg you love/have on hand for an amazing salad!

    What is a Massaged Avocado Kale Salad?

    I'm glad you asked! Basically you take a bundle of your fave kale (mines dino kale) and a ripe avocado. You cut up that kale, toss the avo in and massaged the two together for a few minutes.

    Not ONLY does this help create a dressing, but massaging kale makes it a lot easier to digest - which is good for my sensitive home cook tummies out there! I do this with kale anytime I eat it raw - with oil, salt, or just plain - I highly recommend you start doing this with your raw kale!

    I serve this as a side most the time, but you can definitely add protein/carbs to this dish and make it a full on meal!

    Notable Ingredients: Massaged Avocado Kale Salad

    Massaged avocado kale salad requires few ingredients and thats what makes it such a staple in my house. Yet you can add whatever ingredients you want to spruce it up too.

    • avocado - you'll need a ripe medium sized avocado to pull this off - use two if you want the salad SUPER creamy
    • kale - i love dino kale but when i photographed this one, I used curly. Pick your fave
    • nutritional yeast - "nooch" is what its often called, this is a key flavor driver here and ya need it! I included the brand most commonly seen - bonus: its dairy free for all the vegan/dairy sensitive souls out there!
    • tomatoes - sundried tomatoes are AMAZING in this but I will toss in regular ones too.
    • herbs - i always have parsley/cilantro on hand but basil tastes amazing. If ya got em, toss a few in!
    • nuts/add ons: any nuts you've got, toss a few in! Same thing with any protein you want to add to turn it into more of a meal.

    Home Cook Hacks:

    You can prep this salad ahead of time by adding all the spices and diced kale together - but the avocado & massage action has to happen right before serving! No one likes brown avocado. Maybe you do? I can't stand it. Ha!

    You can turn this into so many things. Double the recipe and add chicken, tofu, tempeh, beans, roasted potatoes, beets ... any other veg you want/ have on hand.

    My go-to these days has been the OG recipe with canned tuna (in oil for that flllavor) with whatever extra veg I have in the fridge. I'll serve it with bread, tortilla chips, crackers ... whatever I have. It's a quick lunch and so good!

    Ingredients

    Scale

    Produce:

    • 1 bunch kale (curly or dino) washed & chopped into bite size pieces
    • 1 large ripe avocado
    • 1 small tomato or ¼ cup chop sun dried tomatoes
    • 1-2 tbsp fresh chopped herbs (cilantro, parsley, basil, etc) (optional)

    Pantry:

    • 1-2 tbsp nut of choice for topping (optional)
    • 1 tbsp olive oil
    • 1 - 2 Tbsp nutritional yeast
    • ½ - 1 tsp garlic powder
    • ½ - 1 tsp onion powder
    • ½ - 1 tsp kosher salt

    Instructions

    1. De-stem kale and chop into small pieces/ribbons, add to large bowl
    2. Add avocado to the bowl. Using clean hands, massage avocado and kale until kale is wilted and avocado is completely mashed. 
    3. To season: add a splash of olive oil, salt to taste, nutritional yeast, garlic & onion powder to the  kale, mix well.  Taste and adjust seasoning as needed - I like a LOT of nooch. 
    4. Slice up tomato/sundried tomato, herbs, nuts, and anything else you want to add to the salad - the options are endless. 

     

    **Enjoy immediately (as avocado will go off quickly).

Im coming to the end of a huge growth stage in my life and career as a food blogger. 
When I quit my pursuit of grad school to pursue my dream of starting a food blog - I was so naive as to what that actually meant 😅

I quickly learned just HOW much goes on behind the scenes. Close to 2yrs later I learned to build a website, code, use a dslr camera, stage and edit photos, SEO, Pinterest, tailwind, analytics, video creation/editing and so so SO much more. 

To be honest, it's been really fuhreaking hard work. Most of its been self taught. But I've also I invested a LOT of time, energy, and money into courses & equipment to teach me the basics and spent countless hours googling how to do things.

I've gained SO much respect for all the bloggers and creators of all types out there. There are days I really question why I'm not working in a hospital with a good salary and benefits. And there are days I am so stoked I decided to follow my dreams. It takes a ton of faith in the unknown to believe in yourself, to put your head down and crank when your questioning all your choices, and not give up. 

Im beyond privileged to have the freedom to try and hack this, and I'm so grateful for that opportunity. 

It's almost surreal to be sitting here at the end of this massive to-do list, with a full blown blog, and the knowledge and tools I have now to take it to the next step.

2022 is all about consistency for me and we've now reached the cranking out of content phase. 
Lots of fun new series coming up :) 

I have no idea what direction this blog will go in, its a serious labor of passion and love and I'm feelin good about what's to come.

    Quick & Easy Ramen Noodle Stir Fry! @nongshimusa r Quick & Easy Ramen Noodle Stir Fry! @nongshimusa ramen is the star of this show. This dish is perfect for those nights you want take out/something quick and easy to make that is still flavorful.

Super simple to make and you can use up all sorts of dying veggies in the fridge. 

Plus, if you have a few Asian condiments lying around you can take this from a 7 to a 10 real quick. If not- no worries... It's still fire!
