    Frozen Yogurt Bark (Strawberry, Chocolate, PB)

    This frozen yogurt bark is not only tasty but it's dairy free, gluten free, and vegan. It's a seriously quick, tasty, and easy snack/treat that you gotta try!

    I really like making frozen yogurt barks to have on hand in the freezer for a quick and easy snack or dessert. The beauty of them is you can add whatever you want to the top!

    This treat is pretty cold so I find I like it most in the summer. Just remember - when you go to break it up, you have to be quick and re-freeze it right away so it doesn't melt all over!

    I use dairy free yogurt here, but you can use anything you like. This type of dessert is also a great way to use up fruit or odd ends of chocolate bars lying around (if your a household that might find that an issue!)

    Frozen Yogurt Bark Ingredients:

    • yogurt - i used dairy free cashew yogurt in vanilla, feel free to use regular!
    • chocolate - i used a few squares of dark chocolate and chopped 'em up
    • PB sauce - just pb, coconut oil, and maple syrup heated up and stirred together - don't sleep on this!
    • strawberries - sliced up fresh! You can use whatever fruit you want
    • coconut flakes - i had them on hand so I tossed them on, but no need to buy them if you don't!

    Ingredients

    Units Scale
    • 1 ½ cups yogurt ( I used vanilla cashew yogurt)
    • ½ cup sliced fresh strawberries
    • 3 squares dark chocolate, diced
    • 2 tbsps peanut butter
    • 1 tbsp coconut oil
    • 1 tbsp maple syrup
    • 1-2 tbsp coconut flakes (optional)
    • parchment paper

    Instructions

    1. Line a sheet pan with parchment paper.
    2. Add pb, coconut oil, and maple syrup to a microwave safe bowl. Microwave for 15 seconds, stir, and microwave another 15 seconds. Stir and set aside.
    3. Spread 1.5 cups yogurt onto the parchment lined baking sheet, leaving an inch of free parchment paper (as the yogurt may run)
    4. Drizzle the peanut butter mixture onto the yogurt and make swirls (see video).
    5. Add strawberries, chocolate, and coconut flakes.
    6. Toss into the freezer for 3 hours until the bark is set.
    7. Take it out, break it into pieces and store in an airtight container for a month!

Im coming to the end of a huge growth stage in my life and career as a food blogger. 
When I quit my pursuit of grad school to pursue my dream of starting a food blog - I was so naive as to what that actually meant 😅

I quickly learned just HOW much goes on behind the scenes. Close to 2yrs later I learned to build a website, code, use a dslr camera, stage and edit photos, SEO, Pinterest, tailwind, analytics, video creation/editing and so so SO much more. 

To be honest, it's been really fuhreaking hard work. Most of its been self taught. But I've also I invested a LOT of time, energy, and money into courses & equipment to teach me the basics and spent countless hours googling how to do things.

I've gained SO much respect for all the bloggers and creators of all types out there. There are days I really question why I'm not working in a hospital with a good salary and benefits. And there are days I am so stoked I decided to follow my dreams. It takes a ton of faith in the unknown to believe in yourself, to put your head down and crank when your questioning all your choices, and not give up. 

Im beyond privileged to have the freedom to try and hack this, and I'm so grateful for that opportunity. 

It's almost surreal to be sitting here at the end of this massive to-do list, with a full blown blog, and the knowledge and tools I have now to take it to the next step.

2022 is all about consistency for me and we've now reached the cranking out of content phase. 
Lots of fun new series coming up :) 

I have no idea what direction this blog will go in, its a serious labor of passion and love and I'm feelin good about what's to come.

Super simple to make and you can use up all sorts of dying veggies in the fridge. 

Plus, if you have a few Asian condiments lying around you can take this from a 7 to a 10 real quick. If not- no worries... It's still fire!
