    Easy Homemade Poke Bowl - aka "Garbage Bowl"

    This Easy Homemade Poke Bowl is a HIT if you like raw fish. It's super flavorful, customizable, filling, and comes together quickly. Plus, you can order takeout sashimi and rice to simplify things that much more!

    Ok - I worked at a Japanese Sushi Restaurant where I was served a "garbage bowl" as a shift meal nightly. It's the raw scraps of fish that accumulate during the preparation of sushi/sashimi/nigiri. I do not know WHAT sauces Hiro (the sushi chef) was putting in this thing, but it's hands down one of my all time favorite meals.

    The owners had to leave for a while so I figured out how to make something *close enough* to fill the garbage bowl-less hole in my heart.

    Side Note: If your ever in Breckenridge, Colorado looking for some fire sushi - hit up Wasabi - but call and make a reservation because it's small, and busy!) It is a no frills, amazing eatery and I still dream of it and miss it TO THIS DAY. Also, the garbage bowl is not on the menu... HA! Just order the sashimi/sushi (Mari, the other chef) has some amazing tempura as well!)

    Easy Homemade Poke Bowl Ingredients

    let me start off by saying this specific recipe yields 1-2. If you want more, simply adjust the sauces to match the amount of fish your using and personal taste preferences. I'll explain below.

    What to order if you get your fish from a sushi joint: sashimi appetizer, with a side of sushi rice and eel sauce. (make sure they give you soy sauce, wasabi, and ginger!) One order (doctored up with veggies etc) will feed 2 people (unless one of you is a starvin' Marvin...)

    Easy Homemade Poke Bowl Ingredients:

    • Raw fish: Tuna, Salmon, Hamachi - whatever you want. If you don't live somewhere with access to sushi grade fish (I didn't) then order the as described above.
    • Sushi Rice: order from sushi joint or prepare yourself
    • Mayo: I used kewpie, my bosses favorite mayo besides kewpie is Best Foods (he uses that in his spicy mayo - I asked a lot of questions from the master, you're welcome)
    • Sriracha: to mix with mayo for spicy mayo
    • Eel Sauce: Order a side to-go from the sushi joint or pick up at an asian foods grocer
    • Soy sauce
    • Avocado
    • English Cucumber: If using regular, de-seed and de-skin
    • Jalepeno
    • Ginger & Wasabi:

    How to make this Easy Homemade Poke Bowl

    1. Slice raw fish against the grain into bite sized pieces - this makes it soft, similar to when slicing meat
    2. Add mayo, sriracha, soy sauce, and eel sauce to the bowl & stir. Start with 1Tbsp each, I go heavy with the sauce. Play with it to see what you like. 
    3.  Slice cucumber, jalapeno, and avocado. Add to bowl, stir, and put inside fridge to marinated for 15 minutes.
    4. Serve alongside sushi rice, ginger, wasabi, and soy sauce.

    Home Cook Hacks/Substitutions

    I always make this by ordering a sashimi appetizer, with a side of sushi rice and eel sauce. (make sure they give you soy sauce, wasabi, and ginger!) If you live where you can get sushi grade fish easily, go for itttt!

    Ingredients

     

    • 6-7 slices sushi grade fish (or 1 sashimi app to-go)***

    • 1 cup sushi rice (or a side of sushi rice to-go)

    • 1-2 Tbsp mayo (I used kewpie, best foods is a close second)

    • 1-2 Tbsp sriracha

    • 3-4 Tbsp soy sauce

    • 1-2 Tbsp eel sauce

    • ½ english cucumber - sliced in to quarters

    • ½ jalapeno - sliced into halves

    • ½ avocado - diced

    • Soy, ginger, wasabi - for serving

    Instructions

Im coming to the end of a huge growth stage in my life and career as a food blogger. 
When I quit my pursuit of grad school to pursue my dream of starting a food blog - I was so naive as to what that actually meant 😅

I quickly learned just HOW much goes on behind the scenes. Close to 2yrs later I learned to build a website, code, use a dslr camera, stage and edit photos, SEO, Pinterest, tailwind, analytics, video creation/editing and so so SO much more. 

To be honest, it's been really fuhreaking hard work. Most of its been self taught. But I've also I invested a LOT of time, energy, and money into courses & equipment to teach me the basics and spent countless hours googling how to do things.

I've gained SO much respect for all the bloggers and creators of all types out there. There are days I really question why I'm not working in a hospital with a good salary and benefits. And there are days I am so stoked I decided to follow my dreams. It takes a ton of faith in the unknown to believe in yourself, to put your head down and crank when your questioning all your choices, and not give up. 

Im beyond privileged to have the freedom to try and hack this, and I'm so grateful for that opportunity. 

It's almost surreal to be sitting here at the end of this massive to-do list, with a full blown blog, and the knowledge and tools I have now to take it to the next step.

2022 is all about consistency for me and we've now reached the cranking out of content phase. 
Lots of fun new series coming up :) 

I have no idea what direction this blog will go in, its a serious labor of passion and love and I'm feelin good about what's to come.

    Quick & Easy Ramen Noodle Stir Fry! @nongshimusa r Quick & Easy Ramen Noodle Stir Fry! @nongshimusa ramen is the star of this show. This dish is perfect for those nights you want take out/something quick and easy to make that is still flavorful.

Super simple to make and you can use up all sorts of dying veggies in the fridge. 

Plus, if you have a few Asian condiments lying around you can take this from a 7 to a 10 real quick. If not- no worries... It's still fire!
