Ok - I worked at a Japanese Sushi Restaurant where I was served a "garbage bowl" as a shift meal nightly. It's the raw scraps of fish that accumulate during the preparation of sushi/sashimi/nigiri. I do not know WHAT sauces Hiro (the sushi chef) was putting in this thing, but it's hands down one of my all time favorite meals.
The owners had to leave for a while so I figured out how to make something *close enough* to fill the garbage bowl-less hole in my heart.
Side Note: If your ever in Breckenridge, Colorado looking for some fire sushi - hit up Wasabi - but call and make a reservation because it's small, and busy!) It is a no frills, amazing eatery and I still dream of it and miss it TO THIS DAY. Also, the garbage bowl is not on the menu... HA! Just order the sashimi/sushi (Mari, the other chef) has some amazing tempura as well!)
Easy Homemade Poke Bowl Ingredients
let me start off by saying this specific recipe yields 1-2. If you want more, simply adjust the sauces to match the amount of fish your using and personal taste preferences. I'll explain below.
What to order if you get your fish from a sushi joint: sashimi appetizer, with a side of sushi rice and eel sauce. (make sure they give you soy sauce, wasabi, and ginger!) One order (doctored up with veggies etc) will feed 2 people (unless one of you is a starvin' Marvin...)
Easy Homemade Poke Bowl Ingredients:
- Raw fish: Tuna, Salmon, Hamachi - whatever you want. If you don't live somewhere with access to sushi grade fish (I didn't) then order the as described above.
- Sushi Rice: order from sushi joint or prepare yourself
- Mayo: I used kewpie, my bosses favorite mayo besides kewpie is Best Foods (he uses that in his spicy mayo - I asked a lot of questions from the master, you're welcome)
- Sriracha: to mix with mayo for spicy mayo
- Eel Sauce: Order a side to-go from the sushi joint or pick up at an asian foods grocer
- Soy sauce
- Avocado
- English Cucumber: If using regular, de-seed and de-skin
- Jalepeno
- Ginger & Wasabi:
How to make this Easy Homemade Poke Bowl
- Slice raw fish against the grain into bite sized pieces - this makes it soft, similar to when slicing meat
- Add mayo, sriracha, soy sauce, and eel sauce to the bowl & stir. Start with 1Tbsp each, I go heavy with the sauce. Play with it to see what you like.
- Slice cucumber, jalapeno, and avocado. Add to bowl, stir, and put inside fridge to marinated for 15 minutes.
- Serve alongside sushi rice, ginger, wasabi, and soy sauce.
