    Burrito Bowl Foil Packet Meal

    Burrito bowl foil packet meals are delicious, inexpensive, hearty, healthy AND do not require refrigeration! Plus they're vegan (minus the cheese)... NEED I convince you more?

    Camping meals made easy!

    Foil packet meals are seriously the best when camping! I designed this burrito bowl version with ingredients that don't need to be refrigerated. Perks being - on a multi day camp trip, you can save that cooler space for meals that need to be kept cold. Simply prepare this toward the end of your trip when cooler ice starts melting!

    Notable Ingredients: Burrito Bowl Foil Packet Meal

    • Canned Black Beans: Any beans will do, I like black beans best!
    • Ready Rice: I got unseasoned because I wanted to use my own seasonings. You do you but I DO recommend using precooked rice.
    • Salsa: non-negotiable for flavor and to help everything cook. Use YOUR fave!
    • Veggies: I chose red/green bell pepper, jalapeños, and onion because they don't NEED to be refrigerated. You can use whatever your heart desires.
    • Heavy Duty Aluminum Foil: this is a must for throwing things into a fire. Double wrap your packets and you will be golden.

    Burrito Bowl Foil Packet Meal

    Burrito Bowl Foil Packet Meals make a great camping meal! They are inexpensive, flavorful, healthy, simple, and their ingredients do not need to be refrigerated - perfect for the end of a camping trip when ice is running low!

    Ingredients

    Scale
    • 2 Bell Peppers - sliced
    • 1 medium onion - sliced
    • 1-2 jalapeños - sliced (optional)
    • 1-2 tomatoes - diced, for serving
    • 1 ripe avocado - diced, for serving
    • 1 jar of salsa - your fave
    • 1 can black beans
    • 1 package ready rice (precooked rice)
    • 6 Tbsp oil (I used canola)
    • Shredded cheese - optional but we had it on hand
    • Spices (whatever you have on hand): I used
      • garlic powder
      • onion powder
      • chili flakes
      • cumin
      • smoked paprika

    Instructions

    1. Cut the veggies into slices and lay out 10 pieces of foil about a foot long (for 5 packets).
    2.  Assemble the packets: add ⅕th the can of beans, rice, peppers, onions, jalapeños to the packet. Drizzle with oil, season with spices, top with 2 tablespoons salsa, and mix!
    3. Bring the end of the foil to meet and crimp the ends of the foil together, rolling inward to create a seal - like making a calzone. (see video above)
    4. Repeat step above with second sheet of foil for double reinforcement before throwing into the fire!
    5. Make 4 more packets using above steps.
    6. Place packets onto fire coals or portable stove and cook for 15 minutes, turning 7 minutes in.
    7. Open carefully, top with tomato, avocado, cheese, and more salsa and serve immediately!

    Notes

    - add whatever protein you want to this recipe and adjust cooking time as needed. You can use two cans of black beans if you would like!

Im coming to the end of a huge growth stage in my life and career as a food blogger. 
When I quit my pursuit of grad school to pursue my dream of starting a food blog - I was so naive as to what that actually meant 😅

I quickly learned just HOW much goes on behind the scenes. Close to 2yrs later I learned to build a website, code, use a dslr camera, stage and edit photos, SEO, Pinterest, tailwind, analytics, video creation/editing and so so SO much more. 

To be honest, it's been really fuhreaking hard work. Most of its been self taught. But I've also I invested a LOT of time, energy, and money into courses & equipment to teach me the basics and spent countless hours googling how to do things.

I've gained SO much respect for all the bloggers and creators of all types out there. There are days I really question why I'm not working in a hospital with a good salary and benefits. And there are days I am so stoked I decided to follow my dreams. It takes a ton of faith in the unknown to believe in yourself, to put your head down and crank when your questioning all your choices, and not give up. 

Im beyond privileged to have the freedom to try and hack this, and I'm so grateful for that opportunity. 

It's almost surreal to be sitting here at the end of this massive to-do list, with a full blown blog, and the knowledge and tools I have now to take it to the next step.

2022 is all about consistency for me and we've now reached the cranking out of content phase. 
Lots of fun new series coming up :) 

I have no idea what direction this blog will go in, its a serious labor of passion and love and I'm feelin good about what's to come.

Super simple to make and you can use up all sorts of dying veggies in the fridge. 

Plus, if you have a few Asian condiments lying around you can take this from a 7 to a 10 real quick. If not- no worries... It's still fire!
