Buffalo and Taco Lovers, Rejoice!
These buffalo cauliflower tacos have a filling that uses cauliflower and chickpeas instead of shredded chicken. This variation adds a really nice texture and flavor profile. My carnivorous boyfriend even loves them, and that is truly saying a lot, because he is *very* honest about my vegan recreations.
I have to admit, I am not a huge buffalo sauce person. There - I said it. My boyfriend and friends are HUGE buffalo people though, so I made this recipe for them, and for all my buffalo lovers out there.
The vingegaryness (if that's a word) and heat of the buffalo sauce mixes perfectly when topped with my creamy hemp dressing! This, I can get behind. Buffalo sauce alone is a no go for me, but add some rich and creamy dressing to the mix, and I am all for it!
Some of our favorite buffalo sauces include New Primal Medium Buffalo Sauce and Wing Time Buffalo Wing Sauce. They're good - and that's coming from me.
Home Cook Substitutions:
- The garbanzo beans can be substituted for red lentils, chicken, turkey, and tofu - whatever you have on hand!
- Cauliflower doesn't bode well with some people's tummy. If so, swap it out for other veggies like squash, zucchini, diced carrots, beets, or roasted butternut squash/ sweet potato cubes.
Buffalo Cauliflower Tacos
- Prep Time: 5 minutes
- Cook Time: 30 minutes
- Total Time: 35 minutes
- Yield: 6 Tacos 1x
Ingredients
Buffalo Cauliflower Mix
- 1 medium head cauliflower
- 1 can garbanzo beans
- 1 tbsp coconut oil
- 1 cup buffalo hot sauce (your favorite)
Spices
- 1 & ½ tsp garlic powder
- ¾ tsp onion power
- 1 - 1 ¼ tsp kosher salt (to taste)
To Serve
- 6-7 corn tortillas (can use flour tortillas, romaine lettuce cups or add on top of salad)
- avocado slices
- cilantro
- Creamy Hemp Dressing
- Your fave buffalo sauce
- shredded cabbage
Instructions
- Preheat oven to 450°F.
- Wash cauliflower and chop into small florets.
- Melt coconut oil. In a bowl, add cauliflower, spices, coconut oil, and hot sauce and mix until well combined.
- Rinse garbanzo beans and add to mixture.
- Grease a cookie sheet with nonstick spray, and evenly distribute mixture over sheet.
- Cooked in oven for 15 minutes. Take out, flip, and bake again for 15 minutes.
- Remove from oven and add more buffalo sauce if desired.
- Spoon mixture into corn tortillas. Top with avocado, cilantro, green onion, and creamy hemp dressing.
Notes
Will last in the fridge one week.
