OK- I know you've seen a millon avocado toast recipes - but this avocado toast with mushroom olive oil is different ... and let me explain why.
The star component of this avocado toast with mushroom olive oil is - you guessed it - the mushroom olive oil. Have you ever tried infused olive oils? I really hope so. They are SO good, and they come in all different sorts of flavors.
I have found them in a few places I have lived, including New York City, Vermont, California, and Colorado. The experience of trying these different oils is great. Typically the shops have little sample cups to pour tastings of the oil into. Better yet, they serve small sample sized pieces of toasty bread to dip in the oil. It's heaven, you guys! Basically, I could spend an entire afternoon in these kinds of stores.
Sourcing Infused Oils
I encourage you to see if there are any local stores to buy oils from before buying anything online. Not only will you be supporting a local business, but you will be able to taste the oils in person, learning different flavor profiles, asking questions, and getting to know your palate and preferences.
These stores typically carry infused balsamic vinegars too. You can start mixing and matching... imagining all the different vinaigrette options to be made by simply an infused balsamic vinegar and oil together!
Admittedly, my dad got me into these. He always has a few bottles of infused oil & vinegar around that he makes salad dressings with. These olive oils are the real deal. They should be used up rather quickly after opening, not saved for 2 years only for "special" occasions, as they go rancid. They also shouldn't be used to cook with, but rather as a finishing touch. This helps their flavors really shine!
I like to add mushroom infused olive oil to a lot of things, including caprese salad, pasta (once its cooked), roasted veggies, fresh veggies, anything dish want the flavor of the oil to enhance! If you can't find mushroom infused olive oil and want to make your own, check out this resource!

The mushroom olive oil really brings a special taste to this one, but if you don't have it, you can sub regular olive oil or omit it all together!

Ingredients
- 2 slices toast* (I used a baguette)
- ¼-½ medium avocado
- 3-4 small cherry tomatoes (halved)
- 1 tbsp mushroom flavored olive oil
Sprinkle of these spices
- salt
- garlic powder
- onion powder
Extra Toppings
- parsley
- red pepper flakes
Instructions
- Toast bread in toaster or oven (preheated to 450°F) for 2-3 minutes or until toasted.
- Mash avocado 2 ways.
1. Cut a quarter to half an avocado and mash the avocado with a fork inside the peel - I find this easier to spread the avocado on the toast.
2. Mash avocado directly onto bread using fork. - Sprinkle spices, and olive oil over avocado. Top with cherry tomatoes, parsley, red pepper flakes and whatever else you like!

* Can use rice thins as a toast substitute.
